Fresh apple cake

1 egg
2/3 cup sugar (or less if you like)
1 tsp. cinnamon
1/3  plus 1 tablespoon cooking oil
1 cup all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt

Mix together and add

2 cups finely peeled and chopped apples 
1/2 cup chopped pecans

Bake in 9 X 9 inch cake pan
:45 minutes at 350 degrees

Caramel sauce
1/2 cup white sugar
1/4  cup cream
1/4  cup butter
1/2 teaspoon vanilla
Dash of salt

Combine a d bring to a boil, serve warm sauce over arm cake.
Delicious.
Double this in a 9 X 13 cake pan

Story- I was looking for a good from scratch cake recipe for Gramma Evanson's 96th birthday party. This was excellent, I served it with ice cream and the caramel sauce. Easy, and good

Chicken Noodle Soup-(Cold-Busting)

2 Quarts chicken Broth (8 cups)
1 onion (whole)- insert 2-3 cloves in the end of the onion

Begin cooking in large soup kettle
Meanwhile-
Brown 2 medium or large chicken breasts in small amount of olive oil, when cooked through, pull apart with 2 forks. (I added about 1 cup of water while this was cooking so it wouldn't cook dry)

3. medium carrots, peeled and diced
2. Stalks of celery, washed and diced
2. Garlic cloves chopped
1  Parsnip shredded
1. 4 inch strip cut of fresh ginger
1. Bay leaf
2. Tablespoons parsley
1/4. Cup white cooking wine

Add above ingredients to broth
Add pulled chicken
Remove cloves from onion, cut onion into smaller pieces, discard cloves

Add salt and pepper to taste

Simmer,
20 minutes before serving, add "Reames" frozen noodles (the amount you want, I used about 1/2 of the bag)
Cook (boil lightly) until noodles are done.

Story-Will had a terrible cold, I wanted to help him get over it, so combined 4 different chicken noodle soup recipes to come up with this one. It was very good, and worthy to go on the blog. I started this soup about 10:00 am for our noon meal.

Okinawa Family Toffee

1 cup butter
1 cup sugar
1 tablespoon corn syrup
3 tablespoons water
1 cup chopped pecans
3/4 cup milk chocolate chips

In a nonreactive sauce pan, combine butter, sugar, corn syrup, and water.  Cook over medium heat, stirring constantly until a temperature of 290 degrees is reached measuring with a candy thermometer (takes about 20-30 minutes).  Mixture will be a rich caramel color.  Be careful not to over or under cook.  When ready stir in 1/2 cup chopped pecans.  Pour into a cookie sheet lined with parchment paper and spread evenly.  Wait 1 minute until it is slightly set and sprinkle with chocolate chips.  Wait 5 minutes and spread the melted chips.  Sprinkle with remaining pecans.  When cool, break into pieces.


This is another recipe from Joanne Baldwin from Okinawa.  She tweaked the recipe until it was perfect.  She would send this to the marines overseas so it definitely ships well.  I made it while at the lake for Christmas 2013.  It flew off of the pan.  I don't think it ever made it into a serving dish!  Granted, we were all indulging a bit much!

Easy Creamed Corn

4 cups frozen, canned, or fresh corn
8 oz cream cheese (room temp)
1/2 cup milk
1/2 cup butter (I used 1/4 cup)
1 Tbsp sugar
1 tsp salt
1 tsp black pepper

Notes/Story: Combine all ingredients in a slow cooker, don't worry about mixing thoroughly, just throw it all in. Cook on high for 1 hour, stir, then cook an additional hour. So creamy and good! Served it with BBQs.

Easy Crockpot Chicken Parmesan

2 pounds boneless, skinless chicken breasts
2 cups spaghetti sauce
1 cup shredded mozzarella cheese
½ cups grated Parmesan cheese
Pasta or spaghetti squash, for serving

Notes/Story:  Place thawed chicken breasts in a crockpot. Cover and cook on low for 4-5 hours. Then drain the chicken and shred with two forks. Put back in crock pot. Add spaghetti sauce and cheeses in with the chicken, put the lid on and cook and additional 45 minutes or until cheese is melted.
Serve over pasta.

I found this recipe on tastykitchen.com and it seemed so easy I decided to try it at the lake. Everyone seemed to like it and it was something Mom and Will could eat with spaghetti squash for their Paleo trial.

Paleo apple crisp

5 or so peeled, cored, and sliced apples
Put in bottom or greased 10 inch pie plate
Sprinkle with cinnamon

Mix together
1/4 cup oatmeal
1/4 cup ground almonds
1/4 cup chopped walnuts
2 Tablespoons real maple syrup
2 Tablespoon butter

Cover with foil and bake 45 minutes until apples are soft

This might be called only a 'part paleo' dessert, as we are using butter and a occasionally oatmeal.

Fresh fish supper

1 package fish ( fresh or frozen)
1 cup ground almonds. ( we bought this at Fleet Farm)
Olive oil
Salt and pepper to taste

Dip fish in olive oil and dip in ground almond
Pan fry until fish flakes and is done.

Baked cabbage and carrots

Boiled asparagus

Paleo apple crisp

Round steak, cabbage dinner

1 1/2. Round steak,  thawed
1/2  can. Tomato paste
1 1/2.  Cup water
1 yellow onion. Sliced
1 green pepper. Sliced

Cut steak in 1 inch slices, add to casserole.  Add onion, pepper, and water mixed with tomato paste.
Bake 350 degrees for about 2 hours. Or until tender.  Check and add water if needed.

Baked sweet potato
Wash, peel large sweet potato
Cut in chunks
Add cut pieces to casserole, add 1/2 cup water
Sprinkle with cinnamon and nutmeg
Cover and bake 45 min. - 1 hour or until soft
Mash with fork, mixing spices into potato

Cabbage and bacon bake
3 cups shredded cabbage
1 yellow onion, sliced
3 strips bacon

Sauté onion, add cabbage and steam covered for 5 minutes
During this time, fry bacon until crisp - cool

Break bacon into bits and add to cabbage / onion mixture

Serve hot.

          Wash and cook in crock pot according to size

Mashed cauliflower ( see recipe on this blog)

Sweet potatoes baked casserole

Bake 350  for 45 minutes
Lightly mash with a fork and serve

Lettuce/ spinach salad

Raspberry cake

1/2  cup coconut oil. (Slightly melted)
1/2. Cup real maple syrup
6 eggs
1/2 teaspoon salt
1/2  teaspoon baking soda
1/2 cup coconut flour
1/2 teaspoon vanilla

Mix the above until smooth
Fold in 1 cup frozen raspberries

Bake in 350 degree oven 35 minutes
Serve with whipped cream

We are trying to eat "caveman" style, this cake has a good taste, is easy, and doesn't call for too many unusual ingredients.  We liked it, in fact.

Cauliflower, mashed

Serves 3-4 people

1/2  cauliflower head washed and sectioned in flowerets
Steam approx 7-10 minutes

While cauliflower is steaming
Sauté  1/2 onion, cut in small pieces
1 clove garlic

Drain and mash cauliflower with potato masher
Add onion and garlic and mash together

Add salt and pepper to taste

Nice variation from mashed potatoes
We tried this during the winter of 2014 when we started to experiment with the cave man diet.

Sweet and Sour Chicken

1 lb cut up chicken breasts
1 Tbsp vegetable oil
3 stalks celery, chopped into 1/2 inch pieces
1 medium green bell pepper, cut into 1 in pieces
salt to taste

Sauce:
1 cup water
1/4 tsp salt
1/4 cup white sugar
0.5 of a1/3 cup apple cider vinegar
1/4 cup ketchup
1/2 tsp soy sauce
1 (8 oz) can crushed pineapple, not drained
2 Tbsp cornstarch and 1/4 cup water - mix

Notes/Story: Sautee chicken until done. Add 1 Tbsp oil and stir in celery and green bell pepper and cook until crisp-tender. Season with salt. Remove from heat and set aside. In a large saucepan mix 1 cup water, 1/4 tsp salt, sugar, apple cider vinegar, ketchup, and soy sauce. Bring to boil and stir in chicken and celery mixture and pineapple. Return to boil and mix in cornstarch/water mixture. Serve with brown or white rice.

I wanted to make something for supper that was spring/summer-like because this winter has been so long. I found this recipe with great reviews and it is delicious!

Bar-b-que Pulled Pork Sandwich

2 pounds beef roast. (I don't use the beef as I like just the pork, but the recipe calls for a combo)
1 and 1 / 2. Pounds pork loin roast. (Here I used about a 3 - 4 pound pork roast and omitted the beef)

2 large onions chopped
3 / 4. Cup celery chopped
1 small can tomato paste
1 / 2. Cup brown sugar
1 / 4. Cup apple cider vinegar
1 / 4 cup chili sauce
2 Tablespoons Worcester sauce
1 Tablespoon ground mustard

Salt and pepper to taste.

Mix ingredients together and cook with pork roast in slow cooker until done, about 7 - 8 hours on low.  (See guide for your slow cooker)

Remove roast and pull apart meat making the pulled pork the size you like.  Pour the sauce over a strainer to remove pieces.

Put pulled apart pork back in slow cooker and add some of the strained bar-b-que sauce back on the pork. Use the amount you like. If it's too much liquid and the sandwiches will be soggy.  At this time, I thought it needed to be thicker, so I added some bar-b-que sauce we had from the store along with the homemade sauce to get a somewhat thicker consistency.

Warm up and serve from the slower cooker on buns.

Story-I love pulled pork sandwiches and didn't have a good recipe, so spent a lot of time searching through recipes online before Christmas break 2013. We served this to a crowd, and the comments were positive. Good recipe, and Archer liked it a lot!!  :)

Ground beef and veggie soup with dumplings

Soup
1 pound ground beef, browned in skillet

1 cup chopped celery
1 cup chopped carrots
1 cup chopped potatoes
1 cup chopped onions

2 cups water
2 cups beef broth. (1 can)

1 large can diced or whole tomatoes
1 cup elbow macaroni

1/2 teaspoon basil
Salt and pepper to taste
Simmer on stove until vegetables are tender

Dumplings
1. Cup all purpose flour
1/2. Tablespoon baking powder
1/4. Teaspoon pepper
1/2. Teaspoon salt
1. Egg,  beat well
1 tablespoon melted butter
1/3 cup whole milk

Mix together and drop by tablespoons into simmering soup. Cover and don't peek doe 18-20 minutes
If you like you can add spices such as red pepper to the dumplings.
This soups was comfort food today,January 4, 2014.  It's 18 below zero and dropping, the wind is picking up, and we've need in the house most all of the day.  The governor here called off school Monday, due to the frigid weather in the north country.
