Paleo apple crisp

5 or so peeled, cored, and sliced apples
Put in bottom or greased 10 inch pie plate
Sprinkle with cinnamon

Mix together
1/4 cup oatmeal
1/4 cup ground almonds
1/4 cup chopped walnuts
2 Tablespoons real maple syrup
2 Tablespoon butter

Cover with foil and bake 45 minutes until apples are soft

This might be called only a 'part paleo' dessert, as we are using butter and a occasionally oatmeal.

Fresh fish supper

1 package fish ( fresh or frozen)
1 cup ground almonds. ( we bought this at Fleet Farm)
Olive oil
Salt and pepper to taste

Dip fish in olive oil and dip in ground almond
Pan fry until fish flakes and is done.

Baked cabbage and carrots

Boiled asparagus

Round steak, cabbage dinner

1 1/2. Round steak,  thawed
1/2  can. Tomato paste
1 1/2.  Cup water
1 yellow onion. Sliced
1 green pepper. Sliced

Cut steak in 1 inch slices, add to casserole.  Add onion, pepper, and water mixed with tomato paste.
Bake 350 degrees for about 2 hours. Or until tender.  Check and add water if needed.

Baked sweet potato
Wash, peel large sweet potato
Cut in chunks
Add cut pieces to casserole, add 1/2 cup water
Sprinkle with cinnamon and nutmeg
Cover and bake 45 min. - 1 hour or until soft
Mash with fork, mixing spices into potato

Cabbage and bacon bake
3 cups shredded cabbage
1 yellow onion, sliced
3 strips bacon

Sauté onion, add cabbage and steam covered for 5 minutes
During this time, fry bacon until crisp - cool

Break bacon into bits and add to cabbage / onion mixture

Serve hot.

Dinner with pork

1 pork roast, lean
          Wash and cook in crock pot according to size

Mashed cauliflower ( see recipe on this blog)

Sweet potatoes baked casserole

Bake 350  for 45 minutes
Lightly mash with a fork and serve

Lettuce/ spinach salad

Apple slices

Raspberry cake

1/2  cup coconut oil. (Slightly melted)
1/2. Cup real maple syrup
6 eggs
1/2 teaspoon salt
1/2  teaspoon baking soda
1/2 cup coconut flour
1/2 teaspoon vanilla

Mix the above until smooth
Fold in 1 cup frozen raspberries

Bake in 350 degree oven 35 minutes
Serve with whipped cream

We are trying to eat "caveman" style, this cake has a good taste, is easy, and doesn't call for too many unusual ingredients.  We liked it, in fact.

Cauliflower, mashed

Serves 3-4 people

1/2  cauliflower head washed and sectioned in flowerets
Steam approx 7-10 minutes

While cauliflower is steaming
Sauté  1/2 onion, cut in small pieces
1 clove garlic

Drain and mash cauliflower with potato masher
Add onion and garlic and mash together

Add salt and pepper to taste

Nice variation from mashed potatoes
We tried this during the winter of 2014 when we started to experiment with the cave man diet.

Sweet and Sour Chicken

1 lb cut up chicken breasts
1 Tbsp vegetable oil
3 stalks celery, chopped into 1/2 inch pieces
1 medium green bell pepper, cut into 1 in pieces
salt to taste

Sauce:
1 cup water
1/4 tsp salt
1/4 cup white sugar
0.5 of a1/3 cup apple cider vinegar
1/4 cup ketchup
1/2 tsp soy sauce
1 (8 oz) can crushed pineapple, not drained
2 Tbsp cornstarch and 1/4 cup water - mix

Notes/Story: Sautee chicken until done. Add 1 Tbsp oil and stir in celery and green bell pepper and cook until crisp-tender. Season with salt. Remove from heat and set aside. In a large saucepan mix 1 cup water, 1/4 tsp salt, sugar, apple cider vinegar, ketchup, and soy sauce. Bring to boil and stir in chicken and celery mixture and pineapple. Return to boil and mix in cornstarch/water mixture. Serve with brown or white rice.

I wanted to make something for supper that was spring/summer-like because this winter has been so long. I found this recipe with great reviews and it is delicious!
