Zucchini Chocolate Bread

Stir together;
1/2 cup butter- melted and slightly cooled 
3/4 cup packed brown sugar

Add to the above;
2 eggs
1 teaspoon vanilla

Combine the following dry ingredients 
1 2/3 cup flour
1/3 cup cocoa
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda

Sift dry ingredients and mix with butter, sugar, eggs, and vanilla.

Fold in 
2 cups zucchini
1 cup chocolate chips

Spoon in loaf pan

Bake 350 degrees for :60-70 minutes ( depending on your oven temp )

Several versions of this zucchini bread recipe can be found in most older cook books, zucchini usually is readily available late summer.

Cinnamon Bread

Cinnamon Swirl Topping

Cinnamon Bread


  • 1)Set the oven rack to the center position and preheat to 350 degrees Fahrenheit. Lightly grease a 9x5-inch loaf pan with non-stick cooking spray
  • 2)In a small bowl, combine ⅓ cup packed dark brown sugar and 1 tablespoon ground cinnamon for the cinnamon swirl topping, set aside.
    3)Melt the ¼ cup unsalted butter in a pan or the microwave, then cool to room temperature.
    4)In a large bowl whisk together 2 cups all-purpose flour, 1 teaspoon baking powder, 1 teaspoon ground cinnamon, and ½ teaspoon kosher salt.
    5)In a medium bowl, whisk together ½ cup granulated sugar, ½ cup dark brown sugar, and 2 large eggs until smooth and pale yellow, 1 minute.
    6)Slowly whisk the melted butter and ¼ cup vegetable oil into the egg mixture until incorporated.
    7)Whisk the ¾ cup whole milk, ¼ cup sour cream, and 2 teaspoons pure vanilla extract into the egg mixture.
    8)Add the egg mixture to the flour mixture. Gently fold the flour mixture until just moistened, with some lumps and flour spots remaining. Do not over mix the batter.
    9)Add half of the batter to the pan. Sprinkle half of the cinnamon and brown sugar mixture over the batter.
    10)Top with the rest of the batter, then sprinkle the rest of the cinnamon mixture on top.
    11)Use a knife to swirl the cinnamon mixture with the batter, up and down into the batter, and around the pan in swirls, but do not completely mix.
    12)Bake the cinnamon bread for 45-55 minutes until a toothpick inserted comes out clean and the bread is set, or internal temperature reaches 205 to 210 degrees Fahrenheit. Cover the bread loosely with foil about 30 minutes into cooking to prevent the top from getting too brown.
    13)Cool the cinnamon bread in the pan for 10 minutes. Carefully remove and transfer to a cooling rack. When the loaf is cool, slice it and enjoy!
    I made this and it was so amazing I had to share! Great warmed up with butter.

Bread machine ‘Homemade cinnamon rolls’

Add to bread machine in the following order.

1 cup warmed milk (not over 110 degrees F)
2 Tablespoons granulated sugar
1 teaspoon salt
3 Tablespoons soft butter
1 large egg
3 cups flour
1 Tablespoon yeast

Mix in bread machine on the dough setting. This usually takes approximately 1:30.

After removing from bread machine roll out (on a floured surface) into a 12 inch by 18 inch rectangle.

Brush dough with 1/4 to a 1/2 cup softened butter
Sprinkle about 1 cup brown sugar over butter 
Sprinkle with cinnamon (about 2-3 Tablespoons)

Tightly roll up dough lengthwise.
Cut dough into 12 - 1” slices

Place in 9 X 13” cake pan, cover and let rise in a warm place about an hour.

Bake at 325 degrees about :15 minutes or until slightly browned.

Frost with powdered sugar frosting. (Add cream cheese if you like the flavor in the frosting)

Delicious No Knead Bread

 3 cups warm water
1 Tablespoon active dry yeast
1 Tablespoon salt
6.5 cups unbleached all purpose flour

Mix together in a large bowl, and the dough should be wet and blobby. Cover with plastic wrap and let rise 1-2 hours. Portion into thirds, and using as much flour as needed on your hands, shape into three round loaves. Place on parchment paper on pan. Cast iron skillets work well, or put two per cookie sheet. Cover and let rise about 45 minutes. Bake at 450 for about 20 minutes, until bread is at 190 degrees. Rub with butter and let cool. Slice and freeze if it's not eaten in a couple days. 

I love the smell of homemade bread and this bread is great alongside soup or salad.

Whole Grain Bread 🍞

 2 Pound loaf started in bread machine

1 3/4 cup water

3 Tablespoons oil (I use Olive Oil)

1 1/2 teaspoons salt

3 Tablespoons sugar (or honey or maple syrup)

2 Tablespoons dry powered milk

2 Tablespoons vital wheat gluten ( found in baking aisle of grocery store

4 1/2 Cups whole wheat flour

2 teaspoons yeast

Follow directions on your bread machine. The dough cycle works well for this recipe. Usually it mixes and rests the dough for about 1:30 or so, after that, remove it from the bread machine and place the dough in a bread tin, let rise about an hour in a warm location. Bake 350 degrees about :30-35 minutes.

Four-Grain Flapjacks

 1 cup whole wheat flour

3/4 cup all purpose flour

1/3 cup cornmeal

1/4 cup quick oats

2 tsp baking powder

1 tsp salt

1/2 tsp baking soda 

In another bowl, combine:

1 3/4 cups buttermilk

1/4 cup melted butter

1/4 cup maple syrup

3 eggs

Quickly mix the liquid ingredients into the dry ingredients. Cook on griddle. 

I thought this recipe sounded hearty so tried it and loved it!

Oatmeal Pancakes

3/4 cup old fashioned oats
3/4 cup sprouted whole wheat flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup almond milk
1/4 cup egg whites

Mix all ingredients and let sit 5 min. Pour onto griddle and enjoy with whatever toppings you like!

I made these when Laura was here visiting for a weekend and she really liked them so on the blog they go!

Makes 4 big pancakes

Caramel rolls

1/2 cup sugar
1/2 cup butter
2 cups buttermilk
6. Cups bread flour
2 teaspoons salt (scant)
2 teaspoons baking powder
1/4 teaspoon baking soda
1 package yeast ( or 2 1/4 teaspoons yeast from a bulk container)

I mix the ingredients in my Bosch bread maker. And mix them in order. I melt the butter and use whole milk thickened with vinegar as most of the time I don't have buttermilk in the fridge. I start out with 4 cups flour, and gradually add more until it doesn't stick too much to the side of the bowl. When all mixed I put the speed up to 2 and let it mix for about 7-8 minutes.  Let set and rest 10 minutes or so.

Caramel sauce
3 cups brown sugar
2 cups heavy cream
2 tablespoons light corn syrup

Heat above until sugar is dissolved and slightly thickened.

Knead on floured surface, and roll to about 10 X 18 inch rectangle. Spread with 4 or so soft butter and sprinkle with a sugar cinnamon mixture, about (1 teaspoon cinnamon and 3 tablespoons white sugar)

Starting with long side roll up and press to seal.  Cup into about 12 - 14 cinnamon rolls

Pour caramel sauce into sauce pan ( use  two. 9 X 13 inch pans) place about 6 or 7 rolls in each pan.

Allow to rise in a warm place about 2 hours or until double.
Bake 375 degrees for 25-30 minutes
 Invert onto platter while warm

Pumpkin bread

1 can Libby's Pumpkin
4 Eggs
1 cup oil
2/3 cup water
1 cup sugar (the original recipe called for 3 cups)

3 1/2 cups flour
2 tsp baking Soda
1 1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp cloves
1/4 tsp ginger

Beat together pumpkin mixture. Add dry ingredients and lightly mix until well combined. Add to 2 loaf pans and bake for 50 minutes at 350 degrees.

Story. Elizabeth made this after Thanksgiving 2016. An easy and good bread recipe. She found it on Allrecipies, with 6000 plus 5 star ratings. We added chocolate chips to part of a loaf per Laura's request.

Pumpkin breakfast cookies by; Whole foods

1 cup whole wheat flour
1 1/2 cups oatmeal
1/2 tsp salt
1/2 tsp baking powder
1 tsp cinnamon
1/4 tsp ginger
1/4 tsp nutmeg
1/4 tsp cloves

Mix together dry ingredients

1 cup puréed pumpkin
1/3 cup maple syrup
1/2 cup applesauce
1/4 cup coconut oil
1 - 2 Tablespoons almond milk ( or regular milk)
1 egg

Mix above ingredients together well

Combine wet and dry ingredients, stir just until mixed ( do not over mix)

Bake 350 degrees. 15-18 minutes

Story-a whole foods recipe using healthy ingredients. I tried them fall of 2016, they are OK, can't compare to chocolate revel bars or brownies, but pretty good for a healthy snack.

Soaked Whole Wheat Pancakes

2 cups whole wheat flour
1.5 cups whole milk
2 Tbsp apple cider vinegar
2 eggs lightly beaten
2 Tbsp melted butter
1 tsp vanilla
1/2 tsp salt
1 tsp baking soda
1/2 tsp baking powder

Notes/Story: Mix vinegar into the whole milk in small dish and add to whole wheat flour in big glass mixing bowl. Cover and place in a warm spot for 12-24 hrs. 

Then add rest of ingredients and make into pancakes on griddle. 

"Because they are acidic, buttermilk, cultured milk, yoghurt and whey (as well as lemon juice and vinegar) activate the enzyme phytase, which works to break down phytic acid in the bran of grains. Sour milk products also provide lactic acid and lactobacilli that help break down complex starches, irritating tannins and difficult-to-digest proteins. Soaking increases vitamin content and makes all the nutrients in grains more available. This method has the further advantage of so softening whole meal flour that the final product is often indistinguishable from one made with white flour." - Nourishing Traditions (where I found the recipe)

Subway HoneyOat Bread

1 and 1/2 cups water
1/2 cup honey
1/3 cup butter

Heat the above ingredients to 120 - 130 degrees F

5 cups bread flour
1/2 cup oatmeal
2 teaspoons salt
1 Tablespoon yeast (or use one package of yeast, I buy it in jars so would use about a Tablespoon)
2 eggs
2 cups wholewheat flour (about.....I add whole wheat flour to the mixing bowl until it no longer sticks to the sides as it goes around during mixing.

1 egg white
1 teaspoon cold water. (Whisk together water and egg whites until frothy)
1/2 cup crushed oatmeal flakes

Process. Heat water, butter and honey, pour into mixing bowl (I use the big stand Bosch mixer for breads)
Add flour, oatmeal, salt, and eggs, mix well and add yeast ( I added this last just in case the water mixture is too hot because I left it in the microwave too long, and I don't want to kill the yeast) and lastly add the whole wheat flour, about 2 cups, or until the dough doesn't stick to the sides of the bowl as it is mixing.  

Mix for 8 minutes or so on a medium speed. 

Grease a large mixing bowl, put dough in bowl, cover and let rise in a warm place until double is size.
Punch down and divide into 7 -  1 1/4 inch X 12 inch bread sticks, let rise covered with a clean dish towel.

Preheat oven to 375 degrees, Brush egg white / water mixture over dough, sprinkle crushed oatmeal on top.

Bake for 20 - 25 minutes

Serve and enjoy with meat, cheese, lettuce, spinach, tomatoes, banana peppers, green peppers, black olives, onions, and whatever else you would like on your 'made at home- subway sandwich'

Story; Roger and Ardis called one evening to let us know they would drive over for a visit the next day. Well,we live 15 miles fro. The nearest town, so I looked for a recipe to make sub sandwiches for lunch. Ryan, Stephanie, and the boys were here. Everyone liked how this bread turned out, a keeper recipe.

Pioneer Woman's 2 Pizza Crust

1 1/2 c warm water
1/3 c olive oil
1 teaspoon yeast
4 cups flour
1 teaspoon salt

Pour the warm water in the mixer bowl. Sprinkle yeast over; wait a few minutes until frothy. Add olive oil, flour, and salt. Mix with the dough hook until a sticky ball forms. Cover and refrigerate up to 3 days.

When ready to make: divide into two equal portions. Oil the baking sheet. Stretch the dough until it nearly fills the sheet. Add toppings and bake at 500 degrees for 10-15 minutes, until the crust is done to your preference.

Pumpkin Chocolate Chip Muffins

2 eggs
1 cup sugar
8 oz canned pumpkin
3/4 cup oil
1 1/2 cup flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp cinnamon
1/2 tsp salt
1 cup chocolate chips

Directions:  Mix eggs and sugar. Add the pumpkin and oil.  Mix well.  Add the dry ingredients but add the flour last. Fold in the chocolate chips.  Bake at 375 for 15-17 minutes. 
Story:  On Monday Aaron moved a TV for his neighbor (Pat) from Pat's house into the garage. The next day she brought over two loaves of chocolate chip banana bread.  After eating a few slices, it made me really hungry for pumpkin chocolate chip bread or muffins! So on Thursday I went to the store, got the ingredients, and proceeded to make a batch of muffins. They are tasty and moist!

Banana Blueberry Bread

3 cups all purpose flour
1 1/2 cups sugar
4 tsp baking powder
1 tsp salt
1 1/2 cups quick cooking oats
2/3 cup vegetable oil
4 eggs, beaten
4 mashed bananas
2 cups fresh or frozen blueberries

Notes/Story: Preheat oven to 350. Mix flour, sugar, baking powder, and salt. Stir in oats. Add oil, eggs, bananas, and blueberries, stirring just until mixed. Divide dough evenly between two 8 1/2 x 4 1/2 inch loaf pans lined with parchment paper. Bake about 1 hr and let cool in pan for 10 min.

This is one of the recipes I tried on my extreme bake day, 11/26/11. Very moist and delicious!

4 Grain Orange-Flax Muffins

Mix the following ingredients in a large mixing bowl
1 1/2 Cup Oat bran
1 Cup flour
1 Cup flax seed (ground)
1 Cup wheat bran
1 Tablespoon baking powder
1/2 teaspoon salt

In a Food processor mix the following ingredients
2 Oranges-peeled, quartered, and seeded
2 eggs
1 cup brown sugar
1 cup buttermilk
1/2 cup canola oil
1 teaspoon soda

Mix dry ingredients with the orange mixture.

Fold in
1 - 1 1/2 cup raisins (when the kids were little they didn't like raisins added to muffins, so I would grind them up in the food processor and they would blend in with the other ingredients-no one complained)

Spoon into paper lined muffin tins. Bake at 375 degrees  18-20 minutes.

Story; this was a recipe I found when we were trying to cook and bake with healthy ingredients. It is very good tasting, easy to make, and healthy. I made these for after school treats.

Amish Cinnamon Rolls with Caramel Frosting

Rolls:
2/3 cup sugar + 2 tsp sugar, divided
1 cup warm water
2 pkgs yeast (0.25oz) pkts
4 beaten eggs
2/3 cup melted butter
1 tsp salt
1 cup homemade mashed potatoes
6 cups bread flour
Filling:
1 cup brown sugar
2 Tbsp cinnamon
6 Tbsp melted butter
Frosting:
1 stick butter
1 cup brown sugar
1/4 tsp salt
1/4 cup milk
1 tsp vanilla
2 1/2 cup powdered sugar
Notes/Story: 1) Mix 2 tsp sugar, warm water, and yeast. Lets stand 5 min.
2) Mix together the rest of the roll ingredients in a large bowl and add the yeast mixture gently. Cover dough and let rise 2 hrs.
3) While dough is rising, mix together brown sugar and cinnamon. Once the dough has risen, roll out dough in a rectangular shape to about 1/4 inch thickness. Spread with the melted butter and brown sugar and cinnamon mixture. Roll up and cut into 1" slices. Place slices 1" apart on a baking sheet greased with melted butter. Let rise for 1 hr and 15 min. Bake at 350 for 20-25 min.
4) For frosting, melt the butter in a saucepan over low heat. Blend in the brown sugar and salt. Cook on low for 2 min. Stir constantly. Add milk. Remove from heat and add vanilla. Let cool and add powdered sugar. Spread over rolls when rolls cool.
I made this after Thanksgiving 2010 since there was leftover mashed potatoes. These were delicious and couldn't even tell there were mashed potatoes in the rolls.

Morning Glory Muffins

1/2 cup oil
3 eggs
1/2 cup honey
2 teaspoons vanilla

2 1/2 cups grated carrots
2 grated apples
1/2 cup raisins

2 cups flour (can divide this between whole wheat and all purpose flour)
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt.

Method & Story;Grate carrots, apples, and raisins in food processor. (I processed the raisins because some folks didn't like to eat raisins in the muffins.....?? Mix all ingredients together and spoon into muffin tins bake 350 degrees for about 20 minutes or until done. These freeze well.

We started making these muffins in 1993 and made them regularly for several years. They are healthy, taste good, and are easy to store in the freezer.

Oatmeal Banana Cupcakes

3/4 cup honey
1/2 Cup butter
2 eggs
3 bananas (mashed-1 cup)
3/4 teaspoon salt
1 cup oatmeal
1 1/2 cup flour
1 teaspoon baking powder
1 teaspoon baking soda

Method & Story; Mix together and bake in cupcake tins 350 degrees for 18 to 20 minutes.
Eva made these often and they are easy and good. If I don't have enough banana's for banana bread, I often make these.

Master pancake/waffle mix

6 1/2 Cups whole wheat flour
1 1/2 Cup soy Flour
1 Tablespoon Salt
1 Cup instant dry milk
1/3 Cup baking powder
2 1/2 Cups Wheat Germ

Pancakes-Add
I egg
1 Cup butter milk or milk
3 Tablespoon of oil
1 1/2 master mix

Waffles
2 eggs
1 1/2 Cup milk
3 Tablespoons oil
1 1/4 Cup master mix

Story; For several years when the girls were young we had this Master Mix made up. It was easy to add the additional ingredients when we were ready to make pancakes or waffles. It was healthy and easy to prepare. We added blueberries, or strawberries and served it with whipped cream and REAL maple syrup.
