Keto breakfast sandwich

Bread ingredients:
1 Tbsp butter
1 egg
1/2 tsp baking powder
Dash of salt
2 Tbsp almond flour

Sandwich insides:
1 fried egg
1 sausage patty
1 slice of cheese

In large straight sided mug, melt butter. Add rest of bread ingredients and mix well. Microwave 90 sec. Slice in 2. Toast on pan you are frying your egg on.

Meanwhile, fry egg and breakfast sausage. Place sliced cheese, fried egg, and breakfast sausage on toasted bun and enjoy!

Easy keto low carb taco soup recipe

1 pound ground beef
3 tbsp taco seasoning
4 cup beef bone broth
2 (14.5 oz) cans diced tomatoes
3/4 cup ranch dressing

In the bottom of a large pot over medium high heat, brown the ground beef for about 7 to 10 minutes, until no longer pink. Drain if desired. Add 2 tablespoons taco seasoning and 3/4 cup of broth. Simmer for a couple of minutes, until the liquid is mostly gone. Add the remaining broth, diced tomatoes (with liquid), and remaining tablespoon of taco seasoning. Stir together. Bring to a gentle boil and simmer for about 8 to 10 minutes. Remove from heat. Wait two minutes, then stir in the ranch dressing. If desired, garnish with shredded cheddar cheese and cilantro. Easy lazy cabbage roll casserole

1 Tbsp avocado oil
4 cloves garlic
1 1/2 lb ground beef
1 1/2 tsp salt
1/2 tsp pepper
1 medium head cauliflower (riced, about 4 cups)
2 Tbsp Italian seasoning
3/4 medium head cabbage (shredded; about 6 cups. Or use coleslaw mix.)
3 cups marinara sauce
3 cups mozzarella cheese

Heat oil in a large sauté pan over med heat. Add the minced garlic and cook for up to a minute, until fragrant.

Increase heat to medium high. Add the ground beef. Season with sea salt and black pepper. Cook, breaking apart with a spatula, until browned, about 10 minutes. Drain if needed.

Meanwhile, preheat the oven to 350°F.

In a 9 x 13” glass baking dish, stir together the rice cauliflower, chopped cabbage, and Italian seasoning.

When the ground beef is cooked through, stir that in. Stir in marinara sauce. Bake for about 30 minutes, until the cabbage is crisp tender. Top with shredded mozzarella, if using. Continue baking for about 15 minutes, until the cheese is golden brown and the cabbage is completely cooked through.

Creamy Mushroom Keto Casserole

  • 8 medium chicken thighs
  • 1 large cauliflower, chopped
  • 8 ounces cream cheese
  • 2 stalks green onions, chopped
  • ½ cup chopped mushrooms
  • 2 tablespoons sour cream
The Execution
  1. Place the chicken thighs into a casserole dish then layer the mushrooms and cauliflower on top.
  2. In a separate bowl mix together the cream cheese, sour cream, and green onions.
  3. Spread the cheese mixture onto the cauliflower.
  4. Mix the top of the casserole together until the cream cheese mix coats all the veggies.
  5. Bake uncovered at 350F for 1 hour.

I've used ham or cut up sausage instead of the chicken and it was great!

Creamy Cauliflower Soup

1 can coconut cream (13.5 oz)
1 box chicken broth (32 oz)
2 lbs chopped or riced cauliflower
Salt and pepper to taste

Boil coconut cream, chicken broth, cauliflower, and salt and pepper for 20 min in large pot. Then blend in blender until smooth. So easy, healthy, and delicious!

I made this for Mom and Will when they came down for their doctor appointments in November.

Lazy Lasagna

2 lbs thawed ground beef
2 (12 oz) jars spaghetti sauce
1 1/2 Tbsp dried oregano
1/2 tsp salt
1 tsp onion powder
1 tsp garlic powder
1/8 tsp cayenne pepper
8-16 oz roughly chopped fresh spinach
1 (8 oz) package cream cheese
1 (14 oz) container cottage cheese
2 eggs
8 oz mozzarella cheese, grated
1/4 cup finely grated Parmesan cheese

Preheat oven to 350. Brown the meat in a large skillet over high heat, then drain off any excess fat if necessary. Add the sauce and seasonings, and simmer over low heat for several minutes. Put the cream cheese, cottage cheese, and eggs in a food processor and process until smooth.

Layer half  the meat sauce in the bottom of a 9 x 13 inch baking dish. Top with half  the cheese mixture, then layer on half the spinach. Follow with half the grated mozzarella. Repeat the layers, ending with the mozzarella. Top with a good sprinkling of Parmesan cheese. Bake for 40 min or until bubbly.

Loaded Spaghetti Squash Casserole

1 large spaghetti squash
2 cups grated cheddar cheese
2 lbs cooked ground beef or diced cooked chicken
6 Tbsp butter
1/2 cup heavy cream
1 cup sour cream
1/2 cup bacon pieces
salt and pepper to taste

Preheat oven to 350. Cook the squash until tender, then scoop out the "spaghetti" using a fork. In a large bowl, mix the squash with 1 cup of the cheddar cheese and the remaining ingredients. Mix well and place in a 9 x 13 inch baking dish. Top with the remaining cheese and bake for 30 minutes or until bubbly.

Buttah Chicken

2 1/2 pounds thawed boneless chicken thighs
1 (28 oz) can crushed tomatoes
1 Tbsp plus 1 tsp garam masala
1 tsp onion powder
2 1/2 tsp salt
1/2 tsp cayenne pepper (optional)
3 Tbsp butter
1 large onion, diced
2 tsp minced garlic
1 (24 1/2 oz) can petite diced tomatoes, drained
1/2 cup sour cream
1/4 cup cream

Place the chicken thighs in the bottom of the crockpot. Blend the crushed tomates with the seasonings and butter, then add to the crockpot. Add the onion, garlic, and the diced tomatoes. Cook on low heat all day or on high heat for 5 - 6 hrs. Just before serveing, break up the chicken with 2 forks, then mix in the yogurt and cream. Serve over rice or Cauli Rice.

Creamy cauliflower soup

2 tbsp butter
1 small onion, diced
2 cups chicken stock 
2 cups cream
1.5 heads chopped cauliflower 
8 oz shredded cheese of choice (cheddar is recommended)
1/2 tsp paprika
1 tsp Dijon mustard
1 tsp salt
Pepper to taste

Notes/Story: Saute onion in butter until soft. Add cream and chicken stock. Bring to a simmer and add chopped cauliflower. Boil for 20 min until the cauliflower is really soft. Then put soup in blender and blend until puréed or use immersion blender if you want it more chunky. Pour back into origional soup pot and add spices and cheese. Stir until cheese is melted and serve immediately. 

I love the creamy cauliflower soup at Cafe  Zupas so I blended a couple recipes together and came up with this one. It's pretty close to the Zupas one and Will even likes it!

Crustless Quiche-Low Carb


8 ounces of sausages (I used the pre-cooked because we had some on hand, and it was easy)
8 eggs
Fresh Spinach (About 2 or 3 cups or use as much as you would like)
1 Cup shredded Cheddar cheese - you can use Pepper jack if you like
1/2 Cup whipping cream or half and half

Serve with 1/4 cup Salsa

Directions and Story:  Preheat oven to 400 degrees, Spray 10 inch pie plate with cooking spray
Beat eggs and add crumbled sausage, chopped spinach, cheese, and cream

Bake for 40 minutes or until center is set. Let stand 5 minutes before cutting and serve with a fruit salad.

Story-We are on a low carbohydrate diet, so this recipe is easy and the total carbohydrates per serving is 9 grams. Everyone liked how it tasted, we could add other ingredients that would vary the taste, too. A successful Sunday evening meal.
