Fluffy Banana Pancakes

3 eggs
1 mashed banana
1.5 cups almond flour
1.5 tsp baking powder
1 tsp vanilla
1 tsp cinnamon

Mix all together. Make into pancakes. Top with favorite toppings.

Paleo Buffalo Chicken Casserole (Or Salad!)

4 cups riced cauliflower
1 1/2 cups diced carrots
1 1/2 cups diced celery
1/2 sweet onion diced
1 lb shredded cooked chicken
1.5 cup paleo mayo
1/2 cup Franks Red Hot sauce
1 tsp salt
1/4 tsp black pepper

If using this as salad: mix all ingredients, chill, and serve.

If using this as a hot casserole....

Preheat oven to 375. Combine riced cauliflower, carrots, celery, onion, salt, and pepper and chicken in a casserole dish and mix well. In a separate bowl, combine the mayo and hot sauce and mix well. Pour the sauce over the casserole, and stir to combine, coating everything well. Bake covered for 45 min, then uncover and bake 15 minutes more.

Sweet potato ground beef casserole

1 pound ground beef
1 onion, chopped
1 green bell pepper, chopped
1 garlic clove, chopped
1 tsp. Cumin
1 tsp. Paprika
1 tsp. Chili powder
1 tsp oregano
Salt and pepper

Sauté vegetables in cooking fat, add ground beef and cook until all pink color is gone

2 sweet potatoes, cut in large cubes
2 Tablespoons olive oil
Lime/ or lemon juice
2 teaspoons chili powder
1/2 teaspoon cumin

Toss together and bake in oven 450 degrees for 15-20 minutes

Mix cooked sweet potatoes with cooked ground beef mixture.

Optional sauce
1/4 cup chopped cilantro
1/4 cup coconut milk
Lime/ or lemon juice
1 teaspoon chili powder

Serve sauce on the side to be poured over potato, beef mixture
Top with chopped green onions for flavor, interest and color.

One of the very good paleo meals we've tried.

Broccoli Apple salad

Broccoli - 1 medium bunch
Carrot- 1 large, peeled and grated
Garlic clove- 1 minced
Apple- cored and finely chopped
Onion- about 1/4 of a large onion
Pecans or walnuts- 1/2 cup course chopped
Dried cranberries- 1/4 cup

Dressing
1/2 cup mayo
1/2 cup Greek plain yogurt
2 Tablespoons lemon juice
1 teaspoon honey

Mix together, this will keep 2-3 days in the refrigerator

Bone broth

4 pounds bones (beef, bison, chicken, turkey, venison) preferred organic and grass fed
2 Tablespoon apple cider vinegar (drizzle to coat bones

2 quarts filtered water
2 roughly chopped carrots
1 onion chopped
2 garlic cloves, crushed and peeled
Parsley
1Tablespoon sea salt

Set slow cooker on low and cook for 24 hours.

When done, discard bones and vegetables and herbs.
Remove solids using a strainer
Refrigerate broth overnight
Skim off top fat layer

Freeze in 1 cup size container for ease of use later on

Heat and use in soups or as you like

Energy Bites

1 cup old fashion oatmeal
2/3 cup coconut flakes
1/2 cup peanut butter
1/3 cup honey
1/2 cup ground flax seed
1/2 cup cocoa nibs
1/3 cup chia seed
1 tsp vanilla

Mix together, form into rounds the size of a walnut or a little larger, freeze.

Dianne made a variety of this recipe Spring 2016, they are good, not at all sweet, and filling

Paleo apple crisp

5 or so peeled, cored, and sliced apples
Put in bottom or greased 10 inch pie plate
Sprinkle with cinnamon

Mix together
1/4 cup oatmeal
1/4 cup ground almonds
1/4 cup chopped walnuts
2 Tablespoons real maple syrup
2 Tablespoon butter

Cover with foil and bake 45 minutes until apples are soft

This might be called only a 'part paleo' dessert, as we are using butter and a occasionally oatmeal.

Fresh fish supper

1 package fish ( fresh or frozen)
1 cup ground almonds. ( we bought this at Fleet Farm)
Olive oil
Salt and pepper to taste

Dip fish in olive oil and dip in ground almond
Pan fry until fish flakes and is done.

Baked cabbage and carrots

Boiled asparagus

Paleo apple crisp

Round steak, cabbage dinner

1 1/2. Round steak,  thawed
1/2  can. Tomato paste
1 1/2.  Cup water
1 yellow onion. Sliced
1 green pepper. Sliced

Cut steak in 1 inch slices, add to casserole.  Add onion, pepper, and water mixed with tomato paste.
Bake 350 degrees for about 2 hours. Or until tender.  Check and add water if needed.

Baked sweet potato
Wash, peel large sweet potato
Cut in chunks
Add cut pieces to casserole, add 1/2 cup water
Sprinkle with cinnamon and nutmeg
Cover and bake 45 min. - 1 hour or until soft
Mash with fork, mixing spices into potato

Cabbage and bacon bake
3 cups shredded cabbage
1 yellow onion, sliced
3 strips bacon

Sauté onion, add cabbage and steam covered for 5 minutes
During this time, fry bacon until crisp - cool

Break bacon into bits and add to cabbage / onion mixture

Serve hot.

1 pork roast, lean
          Wash and cook in crock pot according to size

Mashed cauliflower ( see recipe on this blog)

Sweet potatoes baked casserole

Bake 350  for 45 minutes
Lightly mash with a fork and serve

Lettuce/ spinach salad

Raspberry cake

1/2  cup coconut oil. (Slightly melted)
1/2. Cup real maple syrup
6 eggs
1/2 teaspoon salt
1/2  teaspoon baking soda
1/2 cup coconut flour
1/2 teaspoon vanilla

Mix the above until smooth
Fold in 1 cup frozen raspberries

Bake in 350 degree oven 35 minutes
Serve with whipped cream

We are trying to eat "caveman" style, this cake has a good taste, is easy, and doesn't call for too many unusual ingredients.  We liked it, in fact.

Cauliflower, mashed

Serves 3-4 people

1/2  cauliflower head washed and sectioned in flowerets
Steam approx 7-10 minutes

While cauliflower is steaming
Sauté  1/2 onion, cut in small pieces
1 clove garlic

Drain and mash cauliflower with potato masher
Add onion and garlic and mash together

Add salt and pepper to taste

Nice variation from mashed potatoes
We tried this during the winter of 2014 when we started to experiment with the cave man diet.
